Odysseus was given the warning to leave Helios' cattle alone because they were sacred to Helios. He did repeatedly tell his men not to eat the cattle but he didn't give them a reason why. Had Odysseus told the men that the cows were sacred Helios cattle perhaps his men would've listened. Odysseus realized that starving for a few days/weeks was nothing compared to facing a gods wrath. However, due to the lack of knowledge, Odysseus' men weren't given the chance to realize that and it resulted in a fate worse than starving, death.
